Per Dave's suggestion, I will be posting recipes involving blueberries all week long in preparation for Saturday's
Blueberry Festival 5K.
Oatmeal Blueberry Pancakes- 1 1/2 cups whole wheat flour
- 1 cup rolled oats
- 2 tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 cups milk
- 2 eggs
- 1 cup blueberries (fresh works best)
In a large bowl, mix the first 5 ingredients together and set aside. In a small bowl, beat the milk and eggs until well-blended. Stir this into the flour mixture, and then add the blueberries. Use ~1/4 cup batter for each pancake.
Alternate suggestions: add sprinkles to make blueberry funfetti pancakes!!! #20
